Ingredients:
1 pound 80/20 ground chuck
1 small onion, sliced
2 carrots, cut into matchsticks
3 cloves garlic, sliced
1 zucchini, cut into matchsticks
1 potato, cut into matchsticks
2 tablespoons gochujang (Korean red pepper paste)
1 tablespoon soy sauce
1 tablespoon corn syrup
2 tablespoons mirim (rice cooking wine, aka mirin)
1/4 teaspoon salt
1/4 teaspoon black pepper
6 slices toasted bread
Instructions:
1. Brown the ground chuck over medium heat until meat reaches 160°F on a meat thermometer.
2. Add carrots, potatoes, onion, garlic, zucchini and two tablespoons of gochujang.
Add salt, pepper, soy sauce, corn syrup and mirim.
Heat over medium heat until vegetables are tender, about 10 to 13 minutes.
3. Serve on toasted bread.
